Description
This cucumber carrot apple salad is a refreshing mix of crisp veggies and sweet apple, tossed with lemon and honey. Perfect for quick lunches or a light side dish.
Ingredients
1 medium cucumber
2 medium carrots
1 large apple
1 tsp salt
1 tbsp lemon juice
1 tsp honey (optional)
Instructions
Wash and dry all produce.
Peel carrots and cucumber if preferred.
Slice cucumber thinly and soak in salted water for 10 minutes.
Grate carrots and slice apple thinly.
Drain cucumber and pat dry.
Toss cucumber, carrots, and apple with lemon juice and honey.
Serve fresh and enjoy!
