Description

Fresh cucumber carrot salad with light dressing, ready in 10 minutes.


Ingredients

2 cups sliced cucumbers

1 cup shredded carrots

2 tbsp rice vinegar

1 tbsp olive oil

1 tsp sugar or honey (optional)

Salt and pepper


Instructions

Slice cucumbers and shred carrots.

Soak cucumbers in salt water for 15 minutes, drain.

Whisk dressing ingredients together.
