A quick, fresh, and protein-rich Mediterranean Cucumber Salad with Chickpeas that’s meal-prep friendly and perfect for lunch or a side dish.
Ingredients
2 (15 oz) cans chickpeas, drained
1 large cucumber, diced
2 cups cherry tomatoes, halved
1 red bell pepper, diced
1/4 cup red onion, diced
4 oz feta cheese, crumbled
1/4 cup parsley, chopped
1/3 cup lemon vinaigrette
Instructions
Chop cucumber, tomatoes, bell pepper, and onion.
Drain and rinse chickpeas.
Combine vegetables and chickpeas in a large bowl.
Pour lemon vinaigrette over and toss gently.
Fold in feta cheese and chopped parsley.
Taste and adjust seasoning.
Serve immediately or chill.
Notes
Store in an airtight container up to 5 days.
Add avocado or roasted chickpeas for variation.
Keep dressing separate for maximum crunch.
