Ingredients
2 English cucumbers
n2 tomatoes
n1/2 red onion
n1/4 cup olives
n1/4 cup crumbled feta
n2 tbsp chopped parsley
n2 tbsp chopped mint (optional)
n1/4 cup extra virgin olive oil
n2 tbsp fresh lemon juice
n1 tbsp red wine vinegar
n1 garlic clove minced
nSalt and pepper to taste
Instructions
Slice cucumbers thin and sprinkle with salt; let drain 10 min.
Pat cucumbers dry; chop tomatoes and onions.
Combine cucumbers, tomatoes, onions, and olives in a bowl.
Pour dressing over salad; toss gently.
Add herbs and feta before serving.
Notes
Use seedless cucumbers for best texture.
Store dressing separately until serving for maximum crunch.
